Niagara Falls from the Canadian side ✔️ I had visited the Falls from the US side years ago, but I have to say that the view from Canada is so much better! We took a Maid of the Mist boat tour (and had a complete blast! (See my stories) The views were spectacular and getting so close to the bottom of the Falls was quite the experience... 💦 💧 #drenched
Bowl of goodness!!! This is what I am craving for right now, as we are on our last leg of our family East Coast road tripping adventures. I have to say that it is not always easy to eat a healthy and balanced plant-based diet when you are on the road (this is my first long trip since I switched to a complete plant-based diet...), or staying with friends and/or relatives... The biggest challenge I have personally come across on this trip was the reactions I got when people found out I followed a plant-based diet. The spectrum of the reactions went from defensive (sometimes judgmental 😞) to super apologetic and overly accommodating 🥰, which made me very uncomfortable, especially as a guest... 😅 The solution I found out was working for me, was to not always tell people about my eating choices and to always have healthy snacks on hand. I sincerely thought that eating out a lot was going to be more difficult but was pleasantly surprised that it was quite the opposite (there are always healthy plant-based options in restaurants). NYC was amazing (plant-based options everywhere including my beloved smoothie bowls). Overall, I managed to keep up with it but I have to admit that my fruit intake went down significantly during this trip (our family eats tons of fruit everyday) and I can’t wait to go back home to splurge on all the goodness summer has to offer 🍑 🍓 🍉 🍒🥥🍈 Next challenge, following a plant-based diet when traveling to a foreign country you have never visited before... Coming up soon! 🤙🏼 Stay tuned... Not super easy to post recipes when traveling because we are having so much fun with the fam right now (see my stories) 🤡, so here is a raw recipe I created right before we left on our trip... Hope you will like it. We sure did! Raw zucchini noodle with fried tofu and a peanut dressing. Super easy to make and perfect for summer. To make: 🌱 2 spiraled zucchini 🌱 1/2 cup of red and green cabbage 🌱 1 handful of micro greens (pea sprouts) 🌱 Two roasted and sliced portobello mushroom 🌱 1 sliced green onion 🌱 Fried tofu cut in cubes Toss all ingredients in a salad bowl or in individual bowls Peanut dressing: 🥜 1 Tbsp of peanut butter 🥜 Juice of 1/2 lemon 🥜 1 Tbsp of tamari or soy sauce 🥜 1 tsp of ginger paste 🥜 1 tsp of garlic paste 🥜 2 Tbsp of water Mix all ingredients in a bowl and mix with zucchini salad Add cilantro on top (optional) Enjoy!

A cool crisp salad can be the basis for a light and refreshing meal and will guarantee tons of super rad benefits: fiber, vitamins, disease prevention, healthy weight, youthful energy, should I mention any more? Yes! One more! Save the planet while you are eating more plants and less animal foods! 🙏🏼🌱 So go ahead and make your own bowl of goodness for lunch today! Put as many colors as you can in your bowl, add fruit, nuts, seeds, aminos, herbs, a squeeze of lemon juice! The options are endless! Enjoy! 🥬🥒🍅🥑🥦🥕🌽🌶🍓🍋
Weeeeee! Me enjoying life in summer... 🌞🌴 How is your summer going so far?
Plant-based stuffed bell peppers sound so good in the summer! Recipe below ⬇️ They are a staple in Mediterranean cultures including the South of France,, Italy, Turkey, Greece, etc... but here, I have replaced the white rice with brown rice, and omitted the meat to replace it with protein-packed beans, which makes them super delish and incredibly healthy! Yummayyy! Here is the recipe for ya! For 6 stuffed bell peppers: 🌶6 large bell peppers (different colors is better 🌈) 🌶1 tbsp of extra-virgin olive oil 🌶1 chopped onion 🌶1 cup of cooked brown rice 🌶2 tomatoes 🌶1/3 cup of kidney beans (cooked and can be canned) 🌶1/3 cup of cooked black beans (canned is ok) 🌶1 cup of corn (I use frozen fire roasted corn) 🌶1/4 cup of mixed black and green pitted olives 🌶Pressed garlic (1 Tbsp) 🌶Dry oregano (1tsp) 🌶Dry thyme (1 tsp) 🌶Fresh basil leaves (as much as you like) 🌶1 large can of plain marinara sauce (or homemade) 🌶1 Tbsp of nutritional yeast ******** 🌶Preheat oven at 400 Fahrenheit (205 Celsius) 🌶Warm the oil in a skillet and cook the onion until soft. 🌶Set aside in a big bowl 🌶Slice the top of the bell peppers and remove the seeds and the membrane from the inside (I do it by hand but you can use a spoon) 🌶Stir the brown rice, the chopped tomatoes, corn, beans, olives, garlic, oregano, thyme with the cooked onions and mix well 🌶Pour 1 cup of marinara sauce in oven-proof dish 🌶Pack the mixture in the bell peppers and place on top of marinara sauce 🌶Pour the remaining marinara sauce on top of the bell peppers 🌶Sprinkle the nutritional yeast on top of them 🌶Place dish in oven and cook until bell peppers are soft but not split (about 45 minutes) 🌶Remove from oven and let cool a bit. Place a leaf of fresh basil on top of each pepper Enjoy!!!

Addicted to the beach... I grew in the French Alps, surrounded by beautiful mountains and forests, but I also spent all my summers by the Mediterranean Sea where I felt most “alive.” 🌊 Today I live in beautiful San Diego, California on the Pacific Coast and I am so grateful to be able to get to the beach whenever I want to. Sometimes life happens and I am not able to get my #vitaminsea but I try to make it there at least once a week. It helps me stay focused, calms me down (I suffer from anxiety like many people) and keeps me grounded... plus, I really love the feeling of walking in the sand... yeah I am obsessed with sand as you can tell by my last two posts, haha! What kind of a beach person are you??? I am the “messy” kind, the more sand is on my body, the happier I am! Haha! Mango Raspberry smoothie to get a tropical feel on a very gloomy day (June Gloom go away!) So in my attempt to bring some sun in our life today, here is what this yummy bowl contains: 🌞 1 cup of frozen raspberries 🌞 1 cup of frozen mangoes 🌞 1/2 cup of coconut water 🌞 Splash of vanilla Blend ingredients in a high speed blender until smooth.
